                        The best way to eat lobster is fresh from the sea and onto the table in                        the shell. For some great tips on buying, storing and preparing lobster check out the PEI page on lobster. Serving lobster in the shell isn't always possible but there are certainly many                        ways to enjoy lobster. Some of the recipes listed here may not use lobster but                        may help to enhance the lobster experience. I hope you enjoy these recipes                        as much as we do.   Lobster Salad
Seafood Casserole
Lobster Stuffed   Mushroom Caps
Lobster Dip Recipe
 
 
 Seafood Casserole
                Takes a bit more time but worth every minute!!
                    Butter or margarine                        1/3 cup                    60 ml
                    All purpose flour                            1/3 cup                    60 ml
                    Salt                                                1 tsp.                      5 ml
                    Dash of cayenne
                    Milk                                                2 cups                    450 ml
                    Worcestershire sauce                      1 tsp.                     5 ml
                    Grated Cheddar cheese                   1/2 cup                    125 ml
                    Chopped onion (small)                      1 tbsp.                    5 ml
 
                    Scallops                                          2 cups                    200 ml
 
                    Lobster meat, diced                         11/2 cups                 350 ml
                    Minced parsley                                1 tbsp.                    15 ml
 
                    Butter or margarine                         2 tbsp.                    30 ml
                    Bread crumbs                                  1 cup                       250 ml
        Melt butter in saucepan, stir in flour, salt and cayenne.
       Add milk, stir and bring to a boil. Remove from heat.
       Add Worcestershire sauce, cheese and onion. Stir to melt cheese.
       In medium saucepan, cover scallops with water. Bring to boil and cook
          5 minutes (or until scallops are white and cooked). Drain, cut large
                   scallops in half. Add to sauce.
       Add lobster and parsley. Stir together and spoon into individual shells
          or a large casserole dish.
       In small saucepan melt butter. Stir in crumbs. Cover mixture with
      buttered crumbs. heat in 350 F (180 C) oven until bubbly. Serves 6.

      Lobster Salad
      Nothing goes over as well at a party or get together as a lobster roll. You'll never have any of these left over.
      Cooked lobster                        1 cup                250 ml
      Grated cheese (optional)         1/2 cup              125 ml
      Diced green pepper                 1/3 cup              60 ml
      Diced celery                           1/3 cup              60 ml
      Finely chopped onion               2 tbsp.              30 ml
      Salad dressing                        3 tbsp.              45 ml
      Lemon juice                             1 tbsp.               15 ml
      Finger rolls                             6
       Cut lobster into bite sized pieces and combine with cheese, green pepper,
      celery and onion.
       Blend in lemon juice and salad dressing and mix together until
              completely blended.
       Fill finger rolls with mixture.
              Can be served hot or cold. If served hot, wrap in aluminum foil and bake at 375 degrees F for 10-15 minutes until warm.

    Lobster Stuffed Mushroom Caps
    What a wonderful way to start a party!!
    1/2 lb. cooked, diced lobster
    24 large button mushrooms
    1/3 cup of mushroom soup
    2 tbsp. crushed cornflakes
    2 tbsp. Miracle Whip salad dressing
    1/3 tsp. Worcestershire sauce
    dash of Tabasco and pepper
      Combine all ingredients and mix thoroughly. Remove the stem from each cap and stuff with mixture. Sprinkle with parmesan cheese. Lightly     grease a baking pan and cook at 400 degrees F until hot.
     Lobster Dip Recipe
                Great with assorted crackers, they'll keep dipping with this one.
            1 can lobster meat (minced and drained)
            1 250 g cream cheese (soften)
            2 tsps. lemon juice
            1/3 c. mayonaise
              1/2 tsp. crushed garlic
            1/2  tbsp. chopped green onion
            Dash of pepper
         Mix together until blended evenly. Serve in dip dish and decorate with parsley.
